Coriander Chicken

The ingredients
Brown the chicken in butter and olive oil 
The Coriander sauce
Ready to pop it in the oven to finish cooking.
This was such a hit at our house! Even by my pickiest eater who said, "Mom, you make the BEST chicken!" I doubled the batch and we only had 3 drumsticks left over. My 12 year old loved them so much he munched on one as an after school snack the next day! 

Makes: approx. 10 pieces
Calories: approx. <250 per chicken leg (Chicken leg=200, sauce+browning=<50)

Ingredients:
  • 3 lbs (approx. 10 pieces) Chicken drumsticks, organic, free range
  • 2 Tbsp Organic butter
  • 2 Tbsp Organic Extra Virgin Olive Oil
  • 1/2-1 lemon, sliced
  • 1/2 cup water
  • 1/2 Tbsp Whole grain dijon mustard
  • 1/4 tsp ground black pepper
  • 1 tsp sea salt
  • 1 Tbsp organic garlic, minced
  • 2 tsp Coriander 
Directions:
  1. Preheat oven to 375 degrees.
  2. Spray baking pan with cooking spray. I use Trader Joe's Coconut Oil Spray. Set aside.
  3. Brown Chicken on both sides in a skillet on medium heat in butter and oil. 
  4. Once chicken is browned, place in baking pan. Set aside.
  5. Mix mustard, water, salt, pepper, garlic, and coriander in a bowl. Mix well.
  6. Drizzle the sauce mixture evenly over the chicken. 
  7. Place lemon slices on top of chicken. 
  8. Bake for 30 minutes. 
  9. Turn chicken over.
  10. Bake 30 additional minutes or until chicken reaches internal temperature of 165 degrees.
  11. Discard lemons.
  12. Serve and enjoy!
