No Bean Turkey Chili

Time to eat!
This was another recipe where the idea came from the Beyond Diet website. No leftovers! I tweaked the recipe a bit, but it still follows the plan for those that follow that plan. This would be easy to add beans to as well! Ordinarily, the busy me would have prepped and done this as a slow cooker  meal, but it was grocery shopping day and I didn't have the ingredients in time. So, I improvised!

Serves:8 (Unless you're really, really hungry! Then 5! :)
Calories: 225-250 per serving (Without optional toppings  or bread.)

Ingredients:
  • 2 lbs Organic cage free ground turkey
  • 2 Tbsp Organic butter
  • 2 Organic red bell peppers, chopped
  • 4 organic red vine ripened tomatoes, chopped
  • 1 cup organic celery, chopped
  • 1 Tbsp garlic cloves, minced
  • 1 Organic yellow onion
  • 2 cups Organic, free range Chicken broth
  • 2 tsp chili powder 
  • 2 tsp paprika
  • 2 tsp cumin
  • Sea salt to taste
  • Ground Black Pepper to taste
  • 1/4 tsp cayenne pepper- optional (My 12 year old complained it was too spicy. I thought it was perfect. I will omit this next time for him.)
Directions:
  1. Chop peppers, celery, onion, tomatoes, and garlic. 
  2. In a skillet on medium to high heat add butter, peppers, celery, onions, and garlic. Sauté until vegetables begin to soften. 
  3. Add tomatoes. Continue cooking on medium heat until tomato juices begin to extract from the tomatoes. 
  4. Transfer to large pot. 
  5. Add chicken broth. Continue to heat on low. 
  6. Brown ground turkey in skillet. Once completely cooked, add to pot with vegetables. Stir. 
  7. Mix in chili powder, paprika, cumin, salt, pepper, and cayenne pepper (if desired). 
  8. Heat on low for 10 minutes stirring occasionally. 
  9. Serve. 

Optional:  Shredded cheddar cheese. Plain Greek yogurt as a substitute for sour cream. 
Serve with a warm french baguette.
