Cheesy Beef & Quinoa Enchilada Casserole

Ingredients:
  • 1-1/2 Cup Quinoa
  • 1 lb organic grass fed ground beef
  • 1 can (10 oz) Mild Enchilada Sauce
  • 1 (12 oz) Bag of Frozen Corn
  • 1 (15 oz) Can Black Beans 
  • 2 Tbsp Fresh Cilantro Leaves, finely chopped
  • 1/2 tsp Chili Powder
  • 1/2 tsp Cumin
  • Salt and Pepper to taste
  • 1-1/2 Cup Mild Cheddar Cheese, shredded
  • 1-1/2 Cup Mozzarella Cheese, shredded
  • 1 Fresh Avocado, diced
  • 1 Fresh Tomato, diced
Directions:
  1. Preheat oven to 375 degrees. 
  2. In a saucepan, cook quinoa as directed on package. Set aside. 
  3. In a skillet, brown ground beef until fully cooked. Set aside. 
  4. In a large bowl, combine quinoa, ground beef, enchilada sauce, corn, black beans, cilantro, cumin, chili powder, 1 cup of cheddar cheese, and 1 cup or mozzarella cheese. 
  5. Lightly oil a 9X12 baking dish with nonstick spray (I uses Trader Joe's Coconut Oil Spray). 
  6. Pour mixture into baking dish.
  7. Top with remaining cheeses.
  8. Bake in oven at 375 degrees for 20 minutes, or until heated through and cheeses have melted. 
  9. Top with avocado and tomato. 
  10. Salt and Pepper to taste.
