Cheesy Beef & Quinoa Enchilada Casserole

Ingredients:
- 1-1/2 Cup Quinoa
- 1 lb organic grass fed ground beef
- 1 can (10 oz) Mild Enchilada Sauce
- 1 (12 oz) Bag of Frozen Corn
- 1 (15 oz) Can Black Beans
- 2 Tbsp Fresh Cilantro Leaves, finely chopped
- 1/2 tsp Chili Powder
- 1/2 tsp Cumin
- Salt and Pepper to taste
- 1-1/2 Cup Mild Cheddar Cheese, shredded
- 1-1/2 Cup Mozzarella Cheese, shredded
- 1 Fresh Avocado, diced
- 1 Fresh Tomato, diced
Directions:
- Preheat oven to 375 degrees.
- In a saucepan, cook quinoa as directed on package. Set aside.
- In a skillet, brown ground beef until fully cooked. Set aside.
- In a large bowl, combine quinoa, ground beef, enchilada sauce, corn, black beans, cilantro, cumin, chili powder, 1 cup of cheddar cheese, and 1 cup or mozzarella cheese.
- Lightly oil a 9X12 baking dish with nonstick spray (I uses Trader Joe's Coconut Oil Spray).
- Pour mixture into baking dish.
- Top with remaining cheeses.
- Bake in oven at 375 degrees for 20 minutes, or until heated through and cheeses have melted.
- Top with avocado and tomato.
- Salt and Pepper to taste.
